ZUCCHINI OATMEAL COOKIES

Zucchini Oatmeal Cookies

PRINTABLE VERSION

3 TB greek yogurt (plain flavor)
3/4 c splenda or truvia
3 large egg whites
1 tsp vanilla
2 1/2 c oat flour (grind your own from oatmeal) or whole wheat flour
1 tsp salt
2 tsp cinnamon
1 tsp baking soda
2 c zucchini, grated (variation: 2 c mashed bananas may be substituted for zucchini)
3 c oatmeal
1/2 c chocolate chips (sure, throw some chips in there!)Chocolate Zucchini Oatmeal Cookies
1 c nuts optional

Beat yogurt and egg whites together very well.  Then add splenda and vanilla to the yogurt and egg mixture. Add dry ingredients to the wet mixture. Stir in      zucchini, oatmeal, chocolate chips (if you are going there) and nuts. Drop onto Pam-sprayed cookie sheet. Bake at 350°F for about 10 minutes.

Get your fix of something warm, chocolaty, and no sugar for under 150 calories!

Make 3 because they are that good! I use CytoSport’s EvoPro protein. Use whatever flavor of your liking. Share with us how it turned out and I might be stealing your recipe!

1 scoop protein powder (chocolate or flavor of your choice)

2 egg whites

¼ cup old fashioned rolled oats (or oatmeal for those of you who have the Quaker oatmeal man at the house)

2 TB hot water

PAM spray

Made with Vanilla Protein Powder & Cinnamon

Spray-butter

Use PAM spray to coat your skillet/pan and heat to low/medium. Blend all ingredients in food processor/blender for 30 seconds. Add a splash more hot water depending on how thick/think you like your pancakes. Pour all ingredients onto skillet once it is heated [this step is important]. Flip your pancake when it is ready and cook other side to your liking. I enjoy my pancake with spray-butter or a sprinkle of cinnamon on top!

Chocolate Oatmeal Cookies

Oats, cocoa, warm and gooey - who can complain!

Chocolate Oatmeal Cookies – At just about 50 calories a pop, these sweet treats score big points with everyone!

3/4 cup whole-wheat flour

3 tablespoons unsweetened cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt (this can be omitted, but if you must)

1/2 teaspoon ground cinnamon

1/2 cup unsweetened applesauce

3 tablespoons olive oil

1/2 cup packed LIGHT brown sugar (purchase the less-sugar version)

4 tablespoons confectioners’ sugar

2 egg whites

1 teaspoon vanilla

1 1/4 cups rolled oats

1. Preheat the oven to 350°F. Coat no-stick baking sheets with no-stick spray or line with parchment paper.

2. In a small bowl, combine the whole-wheat flour, cocoa powder, baking powder, baking soda, salt and cinnamon.

3. In a large bowl, combine the applesauce, oil, brown sugar, confectioners’ sugar, egg and vanilla. Mix until well-blended. Add the flour mixture and mix well. Stir in the oats. Drop by rounded teaspoonfuls onto the prepared baking sheets, leaving 2″ between cookies. Bake for 10 to 12 minutes, or until very lightly browned. Do not overbake (seriously, do not overbake these, there is not a lot of fat so they will dry out quickly if baked to long). Remove the cookies and allow to cool.

If you want to add more protein to this recipe, you can always smear peanut butter, almond butter, sunflower butter, or PB2 over a warm cookie once out of the oven! YUM!

Makes 40 servings. Per serving: 50 calories, 1g fat, 0.1g sat fat, 8g carbs, 3g sugar, 0.8g fiber, 2g protein
